Nothing quite compares to juicy, salty and smokey roasted corn. This recipe is super easy, just pop it in the oven for 40 - 1 hour, with a few spices and you will have a crowd pleaser.
Anyone can cook corn, so amping it up with toppings is essential. This particular recipe calls for parmesan cheese and coriander, but almost anything will do. Just give it some extra lovin!
So without further ado, here is the easiest oven baked corn you will ever make.
How To Roast Corn On The Cob In The Oven
You will need:
4 corn on the cob
2 teaspoons smoked paprika
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons of butter (sub for oil if vegan)
Parmesan cheese (sub for nutritional yeast if vegan)
Peal away husk from the corn and place in a baking dish
Mix together paprika, salt, pepper and butter in a bowl. Pop it in the microwave for 30 seconds to melt the butter. Once done mix well.
Drizzle the spice mixture onto the corn. Using your hands to fully cover the corn.
Pop the corn in the oven for 20 - 30 mins
Whilst the corn is cooking, chop up the coriander. I used about one bunch, leaves only. Save the stalks. They are great for adding flavour to soups, curries, stir fries and salads.
After 30 mins, take the corn out and turn it over. Pop it back in the oven for another 15 - 20mins or until it starts to get golden and juicy.
Once out of the oven, plate the corn. Grate over some parm and cover in coriander.
The perfect side dish to any meal.
