We are deep into our Australian winter here and by Australian winter I mean lows of 10 degrees Celsius! It definitely feels colder and the air is very very dry. I am desperately trying to add essential fatty acids to my diet to keep my skin feel moisturised and supple so enter chia seeds. This recipe is so simple I cant believe I haven't made it sooner.
Chia seeds are rich in omega 3 and omega 6 oils. They also provide you with 42% of your daily dietary fibre in one serving.
From a texture point of view, chia seeds swell when they are exposed to a liquid. This creates an amazing gel, one very reminiscent of old school jam, without the gelatine and sugar.
Use this jam for whatever you like. Im currently loving it on buckwheat pancakes with crunchy peanut butter!
You will need:
1/4 cup chia seeds
1 cup fresh or frozen strawberries
1 cup raspberries
note: you can use whatever fruit you have at home. frozen cherries and blueberries are also great!
Pop everything into a large mixing bowl. If your berries are frozen just leave them to thaw for 15 minutes
Mash everything together with a potato masher. You ideally want to remove all the big chunks of fruit. Cover the mixture with a clean tea towel and let it sit for 1 hour. During this time your chia seeds will begin to swell and your jam should start to gel together.
Give it one final mix to ensure everything is well combined. Move it across to a jar and keep in the fridge for about 2 weeks (I'm sure you will eat it fast than this!)
