Turmeric & Coconut Rice Cake + Zesty Syrup

Every time I make this I am always wearing white by coincidence. The bright orange hues from the turmeric are a force to be reckoned with. I recommend wearing something you don't mind getting stained, even if you are a careful cook.

Combined with the coconut cream, the turmeric rice turns onto a crispy yet fluffy rice cake that is sweet and warming. This is a sweet take on the Iranian classic tachin ba morg traditionally made with Saffron. Its packed with circulatory stimulant, immune enhancing and anti-inflammatory herbs.

THINGS YOU'LL NEED:​

CAKE • 2 cups brown basmati rice (can be white and also jasmine, you want a nice long fluffy grain) rinsed • 1 can coconut cream

• 1/4 water • 1 teaspoon salt • 2 eggs • 3 teaspoons of turmeric power • Cranberry raisins

SYRUP + ICING • Zest and juice of 1 lemon • 1 tablespoon honey • 1cm grated zinc • pinch of cayenne pepper (if you want a little kick)

• 1 tin organic coconut cream (organic creams are normally well separated)

METHOD 1. preheat your oven to 200 degrees Celsius (fan forced) 2. In a large bowl combine rice, coconut cream, salt, eggs and turmeric powder - stir until all ingrideints are incorporated 3. Grease a medium sized skillet, cake tin or pie dish (be wary of leakage in spring forms) 4. Cover with foil or a lid (we need to rice to stay nice and moist) 5. Place in the oven and cook for 50 minutes - check your dish - if it is nice brown with a little bit of crisp then it is done. If its not quite there yet cook for a further 10 minutes. 6. Run an offset spatula along the sides to create a little bit of movement 7. Flip cake out onto a serving board. If some gets stuck on the bottom just jimmy it out and place it on top of the cake. You can cover up any cracks with your cranberries. 8. Pour over syrup. Using the second tin of coconut cream, scoop out the solid 'cream' part and use as icing. Sprinkle over cranberries and any other toppings of choice
